Poke Bowl Recipe

There's never a bad time for sushi. This easy at-home poke bowl recipe is a lot more cost effective, and is something the whole family can get involved with. And because you are the iron chef behind this recipe, you can also alter the ingredients to fit your macros. You'll find sushi grade, wild caught tuna at your local grocery store, frozen. Whole Foods regularly has fresh sushi grade tuna too! 

Ingredients:
-1 lb sushi grade tuna, cubed
-1 cup cucumber, diced
-¼ cup shredded carrots
-1 container seaweed salad
-½ mango, diced
-½ avocado, peeled and diced
-2 cups rice, cooked and cooledPoke Bowl Sauce:
-2 TBS coconut aminos
-1 TBS sesame oil
-1 TBS rice vinegar
-1 tsp honeySriracha Mayo:
-¼ cup avocado mayo
-1 TBS sriracha, more or less depending on heat desired

Optional Toppings for Creating a Bowl:
-Black Sesame Seeds
-Green onions
-Salt (course sea salt if you're cool)

Directions:
1. Mix together the ingredients for the poke sauce, and then toss the tuna in it.
2. Mix together the avocado mayo and sriracha in a seperate bowl.
3. Next, you will create your bowl. Put rice in the bottom of your bowl, add the tuna covered in poke sauce, and then top with the fresh veggies and fruit. Drizzle the sriracha mayo on top, and sprinkle your favorite garnishes on top!
