Chuck Roast Stew

This is a super easy stew that you can add really anything to. It's a go-to for me every year, especially in the fall. Who doesn't love a god stew recipe??? Classic!

Ingredients:

-1 chuck roast

-1 container of beef or chicken stock

-carrots, peeled and chopped

-celery, chopped

-1 shallot or half an onion

-the juice of either an orange, lime, or lemon

-whatever seasoning you want to use for the roast 

-salt and pepper to taste

-herbs-rosemary, parsley, thyme, and whatever else you want to throw in there

***You can also add potatoes, sweet potatoes, rice or whatever else you want.

 

Directions:

  1. Season the chuck roast.
  2. In a HOT pan, sear the chuck roast for about 3 min easch side. Make sure you don't move it during those 3 min except for when turning it over. It should be crispy on the outsides but not cooked through.
  3. Put the broth in a pot on the oven or a crock pot if you have one.
  4. Add the chuck roast, all your veggies, the onion, the herbs. Then squeeze whatever citrus fruit you're using over it all. Stir.
  5. Cook on low for about an hour.
  6. Take out the chuck roast and cut it up into pieces. Then put it back in the stew. 
  7. Add salt and pepper to taste.
