Thai Beef Lettuce Wraps

My favorite and easiest ground beef recipe is this Thai beef lettuce wrap!

 

Ingredients:

-2lbs ground beef (can also do this with ground turkey or chicken, if you want something lower in fat)

-2 heads of lettuce

-1.5tbsp coconut sugar

-2.5tbsp ginger, minced

-2.5tbsp garlic, minced

-3 lemongrass stalks, smashed like you would garlic but not chopped

-1 jalapeno, minced

-1tsp sesame oil

-1 bunch of scallions

 

Directions:
1. In a pan over medium high heat, add beef and season with salt and pepper. Break up the meat as it's cooking so it can get golden brown on all sides. Once ht ebeef is carmelized, scoop out of the pan. Leave the fat in the pan.

2. Add the garlic, ginger, lemongrass, jalapeno, coconut sugar, and sesame oil and ocok until soft and fragrant.

3. Take out the lemongrass stalks and throw away.

4. Add the beef back into the pan and stir to combine.

5. Add the beef mixture into the lettuce leaf and garnish with scallions.
