Spaghetti Squash With Bolognese

This is one of my favorite meals! It's so simple and tasty and it's perfect for when the weather starts to cool off!

 

Ingredients:

-1 lb grass-fed ground beef (can also use ground turkey or do half and half if you want less fat)
-3 carrots, diced small
optional: 1/2 onion, diced small + 2-3 garlic cloves, minced
-1 jar tomato sauce of choice
-1 spaghetti squash
-parmesan cheese
-fresh basil for topping

*** I like to double this recipe to meal prep for a few days ahead.

 

Directions:

  1. Preheat over to 425 degrees.
  2. Slice spaghetti squash in half and scoop out seeds. Coat with olive oil and bake until soft (usually takes about 30 min depending on size of squash).
  3.  In a medium pan on med-high heat, add ground beef (no oil needed, beef will cook in its own fat). Chop it up with a spatula, add in onions, garlic, and carrots. Cook and stir for a few minutes.
  4. Add in tomato sauce, fresh herbs, and sprinkle of salt and pepper to taste. Cook until vegetables are tender.
  5. Serve on top of spaghetti squash with parmesan and basil.
