This is one of my favorite meals! It's so simple and tasty and it's perfect for when the weather starts to cool off!
Ingredients:
-1 lb grass-fed ground beef (can also use ground turkey or do half and half if you want less fat)
-3 carrots, diced small
optional: 1/2 onion, diced small + 2-3 garlic cloves, minced
-1 jar tomato sauce of choice
-1 spaghetti squash
-parmesan cheese
-fresh basil for topping
*** I like to double this recipe to meal prep for a few days ahead.
Directions:
- Preheat over to 425 degrees.
- Slice spaghetti squash in half and scoop out seeds. Coat with olive oil and bake until soft (usually takes about 30 min depending on size of squash).
- In a medium pan on med-high heat, add ground beef (no oil needed, beef will cook in its own fat). Chop it up with a spatula, add in onions, garlic, and carrots. Cook and stir for a few minutes.
- Add in tomato sauce, fresh herbs, and sprinkle of salt and pepper to taste. Cook until vegetables are tender.
- Serve on top of spaghetti squash with parmesan and basil.
